Sue Visser 2023
Townsend letter. My six-part series on Food as Medicine is being hosted by Townsend letter, starting with the first one about the gut biome in their 14th e-letter. A special thank you to the publisher, Dr Jonathan Collin and his dedicated team. I have been a subscriber as well as a contributor to Townsend Letter, the Alternative Examiner – for both doctors and their patients, ever since the year 2000. I really appreciate their ongoing encouragement, friendship and support. www.townsendletter.com
You can subscribe to their free e-letter to receive them directly. All their articles are a pleasure to read and share lesser known facts and insights that will help you to draw your own conclusions as opposed to the media hype of medical mavericks.

Learn how to use citrus fruit including fruit, pips and peels to as medicine. make juices from scraps, even dandelions! Make delicous lemon pickle and even use the white flesh for making cookies and muffins less fattening and more satisfying. Use the rind of home grown lemons (without pesticides) for making limonene, a flavourant, disinfectant, insecticide and air freshener. Fresh fruits and vegetables that contain soluble fermentable fibre are sources of butyrate, a short-chain fatty acid that addresses food allergies, inflammation and leaky gut issues. Butyrate regulates appetite to control food intake. Plant protein and fibre are linked to a more diverse and balanced microbiome whereas animal protein and omega 6 fats limit the diversity and quantity (strength) of the beneficial microbial strains. Trans-fatty acids (deep frying) and arachidonic acid (excessive saturated fat) cause inflammation. We need more Omega 3 oil from fish, but vegetarians can benefit from flaxseed oil, used for the Budwig protocol
The original Budwig protocol was based on low fat cottage cheese blended with flaxseed oil. For many decades it has been an evidence-based cue for cancer. Grow lentil sprouts, enriched with elemental (plain, cheap) iodine. When you use iodised salt you only get potassium iodide, so now you can have a food-based equivalent of Lugol’s iodine. Himalayan salt does not contain as much iodine or as regular refined salt. It is free flowing because magnesium is also added to it. MSG is still available from spice shops and Chinese shops. It used to be sold as Robertson’s Zeal, but some people are terrified of it. Are you ?
MSG and why we need it to make Glutathione
Glutathione combats free radicals in the body, helps to detoxify heavy metals and boost T-cell and natural killer activity. As an antioxidant glutathione is made by the body out of 3 amino acids. Fermented milk products are rich in glycine and cysteine. We can add glutamate/MSG, (cheap) or L-glutamine supplements (expensive) to whey to provide an ongoing source of glutathione that helps to recycle vitamin C by constantly removing its free radical load. MSG is not a harmful chemical. Numerous well-conducted scientific studies have failed to show a connection between MSG and adverse health effects.
Sauerkraut, like lentil sprouts, contain a lot of natural (potent) vitamin C. Make it with iodised salt or Himalayan salt. Kimchi is also a lactic acid fermented pickle. It can contain vegetables like cabbage, Chinese cabbage, carrots, peppers, turnips etc. Both are anaerobic , so keep out the air. Other types of pickles use vinegar. Use eggshells and citric acid to make a powerful calcium supplement. It is a good way to prevent kidney stones and oxalic acid toxicity. People who substitute dairy milk for almond milk are more prone to them. So too, if you exchange gluten for almond flour and consume spinach or beetroot juices regularly.

Disclaimer: This information is not intended as a substitute for any doctor’s medication or treatment for their patients. Consult a healthcare professional who is familiar with integrative medicine if you wish to review your prescriptions. Natural ingredients may compete with medications, especially those that can thin blood, lower blood sugar, kill parasites, viruses and bacteria and help to alleviate anxiety and depression. Caution: ginger, chillies and Omega 3 oil and pineapple are as effective as anticoagulant drugs. (Review your meds as they will compete with them and may cause excessive bleeding.) Magnesium is a natural calcium channel blocker and dandelions behave like diuretics. (People call them water pills?)
